To Roast Partridges

Ingredients

Directions

  1. Hang the partridges until they are ready to cook, ensuring they do not spoil.

  2. Carefully pick, draw, and singe the birds.

  3. Wipe the insides thoroughly with a clean cloth.

  4. Truss the partridges with the head under the wing and legs drawn together or crossed.

  5. Dust the birds with flour when placing them over the fire.

  6. Baste generously with butter while roasting.

  7. Serve with bread sauce and brown gravy, pouring a little gravy over the partridges.

  8. Optionally, serve on fried bread crumbs or pass them around separately.
