Why it works: Cucumber and lemon match in chemistry and in kitchens. They rank in the top 9% of all ingredient pairs, and cooks put them together in 2,067 recipes. Both carry trans-2-nonenal, which smells cardboard, fatty. The science ↓

Stewed Cucumbers

Ingredients

Directions

Prepare

  1. Peel and quarter the cucumbers, removing the seeds.

  2. Cut each quarter in half and sprinkle with white pepper or cayenne and flour.

  3. In a pan, melt the butter and lightly fry the cucumbers until golden.

  4. Remove the cucumbers from the pan and drain on a sieve.

Stew and finish

  1. Place the cucumbers in a pot with enough brown gravy to nearly cover them.

  2. Stew gently for 25 to 30 minutes until tender.

  3. If the gravy needs thickening, remove the cucumbers and keep them warm.

  4. Stir in a little flour and butter to the gravy to thicken it.

  5. Add lemon juice, chili vinegar, or cucumber vinegar to taste, if desired.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cucumbers
Provide the main body of the dish, softening into tender pieces during gentle stewing.
Flour
Dusted on the cucumbers for light browning, and stirred into the gravy to thicken it.
Butter
Fat for frying the cucumbers to golden colour and adds richness to the finished dish.
Brown gravy
Forms the cooking liquid that carries flavour and keeps the cucumbers moist while stewing.

The step that matters

Stew gently for 25 to 30 minutes until tender. Gentle heat lets the cucumbers soften through without breaking apart, while a rapid boil can make the gravy reduce too fast and the pieces fall apart.

Swap the cucumber

The recipe marks cucumber as optional. How well each one fits the dish's main ingredients (white pepper, flour, butter, lemon):

  1. Shallotfits better
  2. Arrowrootfits better
  3. Leekfits better
  4. Cucumberthe original

Fit is the average pairing score against white pepper, flour, butter, lemon. Candidates are from the same food group and used in at least 100 recipes.
