What each ingredient does

Cabbages
Forms the bulk of the dish and, once cooked, becomes soft and tender.
Butter
Adds richness and fat, carrying flavour and helping the cabbage coat and gloss.

The step that matters

Pressing out the excess water. Cabbage holds a lot of water after boiling. If it is not pressed and drained well, the excess moisture dilutes the butter and keeps the cabbage wet, so it stews rather than turning dry and glossy in the pan.

Swap the cabbage

How well each one fits the dish's main ingredients (butter, pepper):

  1. Capsicumfits better
  2. Potatofits better
  3. Carrotfits about as well
  4. Cabbagethe original

Fit is the average pairing score against butter, pepper. Candidates are from the same food group and used in at least 100 recipes.
