Modern Chicken Pie

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Preheat the oven to 400°F (200°C).

  2. Season the chicken joints with salt, cayenne, mace, and nutmeg.

Assemble the pie

  1. Line a dish with a thin layer of pastry.

  2. Spread a layer of sausage meat over the pastry.

  3. Place a layer of chicken joints on top, followed by more sausage meat.

  4. Repeat layers until the dish is full.

  5. Roll out the pastry for the cover, trim excess, and secure the edges.

  6. Make an incision in the top and decorate with pastry leaves.

  7. Glaze the top with egg yolk.

Bake

  1. Bake for 1.5 to 2 hours, covering with paper if browning too quickly.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Chicken joints
Provide the main meat filling, which becomes tender and moist during the long baking.
Sausage meat
Adds richness and fat that moistens the lean chicken and seasons the layers.
Pastry
Forms the crust that encloses the filling and holds its shape while baking.
Egg yolk
Glazes the top, promoting even golden browning of the pastry.

The step that matters

Covering the top while baking. Pastry browns quickly in a hot oven over a long bake. Covering it with paper slows surface browning so the crust does not darken or burn before the filling cooks through.

Swap the mace

How well each one fits the dish's main ingredients (pepper, nutmeg, meat, egg):

  1. Cinnamonfits better
  2. Parsleyfits better
  3. Allspicefits better
  4. Macethe original

Fit is the average pairing score against pepper, nutmeg, meat, egg. Candidates are from the same food group and used in at least 100 recipes.
