Mutton Pie

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Prepare the forcemeat and mix in minced eschalot if desired.

  2. Lay the forcemeat between the mutton cutlets and add mutton kidneys for flavor.

  3. Pour in cold water or gravy made from bones.

  4. Roll out the paste to ½ inch thick and cover the pie securely.

  5. Trim the edges and make a hole in the center for steam.

  6. Bake at 400°F (200°C) for 1.5 to 2 hours.
