Tartlets

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Roll out the pastry dough and cut it into rounds.

  2. Use a small cutter to press twelve rounds into rings.

  3. Moisten the rings with cold water or egg white.

  4. Place the rings on the remaining rounds of pastry to form the rims of the tartlets.

  5. Bake at 400°F (200°C) for 10 to 12 minutes.

  6. Fill the warm tartlets with preserve.

  7. Cut small ornaments from the leftover pastry, bake them lightly, and place them on top of the preserves.

  8. Serve the tartlets cold, or reheat in the oven for 1 minute before serving hot.
