What each ingredient does

Gooseberries
Provide fruit flavour, natural pectin and acid that help the jam set.
Granulated sugar
Adds sweetness, preserves the fruit and helps the jam thicken as it sets.

The step that matters

Boil quickly for 45 minutes while stirring constantly. Sugar and fruit pectin must reach the concentration and temperature needed to set. Constant stirring prevents the sugar and fruit from scorching on the bottom of the pan.
