What each ingredient does

Cherries
Provide the fruit, whose juice is drawn out by the sugar to form the syrup.
Sugar
Draws moisture out of the cherries and sweetens the syrup as it dissolves.

The step that matters

Simmer the cherries softly. Gentle heat keeps the fruit intact while the sugar dissolves and the juices thicken. Boiling hard can toughen the skins and break the cherries apart.
