What each ingredient does

Barberries
Provide the fruit base, tartness, and most of the jam's flavor and body.
Powdered sugar
Adds sweetness and, as it dissolves and concentrates, helps the jam thicken and set.

The step that matters

Boiling the mixture. Sugar and fruit pectin only thicken into a set jam once the mixture has cooked long enough to reduce and concentrate. Stirring keeps the sugar from scorching on the bottom of the pot.
