Cambridge Milk Punch
Ingredients
Directions
Make the base
In a pot, combine 2 quarts of new milk and the thinly pared rind of 1 lemon with ½ pound of sugar.
Slowly bring the mixture to a boil, then remove the lemon rind.
Add the eggs and spirits
Take the pot off the heat and stir in 2 well-whisked eggs mixed with ½ pint of cold milk, strained through a sieve.
Do not allow the mixture to boil after adding the eggs.
Gradually add 1 pint of rum and ½ pint of brandy.
For added flavor, you can include a Seville orange stuck with cloves.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Eggs
- Set and thicken the milk mixture gently, giving the punch body and a silky texture.
- Milk
- Forms the creamy base that the eggs thicken and the spirits are added to.
- Sugar
- Sweetens the punch and balances the alcohol and citrus.
- Rum
- Adds the main spirit flavor and alcohol, and helps keep the punch stable.
- Brandy
- Adds warm, fruity depth alongside the rum.
The step that matters
Do not let the mixture boil after adding the eggs. Egg proteins set and curdle when overheated, so the punch turns grainy. Removing the pot from the heat before adding the eggs and keeping it below boiling keeps the texture smooth.
Swap the orange
The recipe marks orange as optional. How well each one fits the dish's main ingredients (milk, lemon, sugar, egg, rum, brandy, clove):
- Vanillafits better
- Figfits about as well
- Orangethe original
- Applefits about as well
Fit is the average pairing score against milk, lemon, sugar, egg, rum, brandy, clove. Candidates are from the same food group and used in at least 100 recipes.
