Why it works: Carrot and pepper match in chemistry and in kitchens. They rank in the top 6% of all ingredient pairs, and cooks put them together in 14,555 recipes. Both carry 2-isopropyl-3-methoxypyrazine, which smells earthy, pea. The science ↓

Directions

Prepare

  1. Scrape and clean the carrots, removing any blemishes. Wash and dry them.

  2. Slice the carrots into quarter-inch pieces.

Make the soup

  1. In a large stewpan, melt the butter over low heat.

  2. Add the sliced carrots and stew gently for 1 hour without browning.

  3. Pour in the brown gravy-soup and simmer for 50 minutes to 1 hour until the carrots are tender.

  4. Press the mixture through a sieve or strainer.

  5. Add salt and cayenne pepper if desired, and boil gently for 5 minutes.

  6. Skim off any scum and serve hot with fried bread on the side.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Red carrots
Provide the main body, sweetness and flavour of the soup once softened and pureed.
Butter
Adds fat and richness, and helps the carrots soften gently in the pan.
Brown gravy-soup
Supplies the liquid base that cooks the carrots and gives the soup its savoury depth.

The step that matters

Stew the carrots without browning. Gentle low heat softens the carrots and draws out their sweetness. Browning would add bitter, toasted flavours and change the soup's clean colour and taste.

Swap the carrot

How well each one fits the dish's main ingredients (butter, pepper, bread):

  1. Capsicumfits better
  2. Tomatofits better
  3. Potatofits better
  4. Carrotthe original

Fit is the average pairing score against butter, pepper, bread. Candidates are from the same food group and used in at least 100 recipes.
