Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Onions
Break down slowly in butter to give the soup its sweetness and deep color.
Rabbit or fowl
Contributes savory meat flavor and body to the stock as it stews.
Curry powder
Supplies the spiced aroma and characteristic flavor of the soup.
Browned flour
Thickens the soup and adds a toasted, nutty note.
Stock
Forms the liquid base that carries and blends all the other flavors.
Butter
Carries the onions' browning and adds richness to the base.

The step that matters

Mixing curry powder and browned flour before adding to the soup. Stirring the powder and flour into a little cold liquid first keeps them from clumping, so they disperse evenly when added to the boiling soup and thicken it smoothly.

Swap the mango

The recipe marks mango as optional. How well each one fits the dish's main ingredients (onion, butter, rabbit, flour, lemon, rice, coconut):

  1. Limefits about as well
  2. Avocadofits about as well
  3. Mangothe original
  4. Cherryfits less well

Fit is the average pairing score against onion, butter, rabbit, flour, lemon, rice, coconut. Candidates are from the same food group and used in at least 100 recipes.
