Why it works: Pepper and lemon match in chemistry and in kitchens. They rank in the top 3% of all ingredient pairs, and cooks put them together in 27,047 recipes. Both carry trans-2-nonenal, which smells cardboard, fatty. The science ↓

To Roast, Bake, or Broil Red Mullet

Oven, in the book's wordsA moderate oven

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the fish

  1. Wash and dry the red mullet thoroughly without scaling or opening it.

  2. Wrap the fish tightly in a sheet of thickly buttered paper and secure the ends with string.

Cook and serve

  1. Roast in a Dutch oven, broil over a gentle fire, or bake in a 350°F (175°C) oven for 20 to 30 minutes.

  2. For the sauce, combine melted butter, fish juices, essence of anchovies, cayenne, port wine or claret, and lemon juice.

  3. Remove the string and serve the mullet with the sauce.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Red mullet
Is the main protein, cooked whole and wrapped so it steams gently in its own juices.
Melted butter
Adds richness and moisture to the sauce and carries the other flavours.
Essence of anchovies
Adds a salty, savoury depth to the sauce.
Port wine or claret
Adds acidity and fruity sweetness to the sauce, balancing the rich butter.

The step that matters

Wrapping the fish tightly in buttered paper. A tight, well-buttered wrap traps moisture so the fish cooks gently in its own steam and does not dry out or stick to the paper.

Swap the lemon
