Clarify the jelly

  1. Add beaten egg whites.

  2. Stir until nearly boiling.

  3. Simmer for 15 minutes.

  4. Let it settle.

  5. Pour through a jelly bag until clear.

Season and serve

  1. When it begins to boil, add mace, white peppercorns, and salt to taste.

  2. Consider adding tarragon vinegar after clarifying.

  3. Use the jelly to serve cold poultry, game, or fish, or mold it with boiled tongue or carved fowl.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Calf's feet
Release gelatin, which lets the cooled liquid set into a firm jelly.
Egg whites
Coagulate as they heat, trapping sediment so the jelly can be strained clear.
Knuckle of veal
Adds body and savory flavor to the stock while contributing additional gelatin.

The step that matters

Clarifying the jelly. Stirring the egg whites in and then letting the mixture simmer gently without a hard boil lets the whites coagulate and trap impurities. Boiling too vigorously breaks up the raft, leaving the jelly cloudy.

Swap the mace

How well each one fits the dish's main ingredients (veal, ham, onion, carrot, egg):

  1. Parsleyfits better
  2. Celeryfits better
  3. Marjoramfits better
  4. Macethe original

Fit is the average pairing score against veal, ham, onion, carrot, egg. Candidates are from the same food group and used in at least 100 recipes.
