Why it works: Thyme and parsley match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 9,057 recipes. Both carry cuminaldehyde, which smells Spicy, cumin. The science ↓

Combine diced ham, chopped carrot, cloves, mace, lemon-thyme, parsley, and butter in a stewpan.
Simmer for 45 minutes to 1 hour.
Stir in 1 teaspoon of flour and continue simmering for 5 minutes.
Gradually pour in 1 pint of boiling veal gravy and let simmer for nearly 1 hour.

What each ingredient does
- Veal gravy
- Provides the savoury meaty body that forms the base of the sauce.
- Butter
- Adds richness and fat, and with flour forms a thickening that gives the sauce body.
- Flour
- Thickens the sauce as its starch swells when heated with the liquid and fat.
- Sherry or madeira
- Adds wine acidity and aroma that brighten and deepen the savoury base.
- Lean ham
- Releases savoury flavour into the stock during the long simmer.
- Lemon juice
- Adds acidity that balances the richness and sweetness of the sauce.
The step that matters
Boil after adding the flour and butter thickening. Flour only thickens fully when its starch granules swell in boiling liquid, so the sauce must be brought to a boil after the beurre manié is added or it will stay thin and may taste floury.
