Ingredients

Directions

Braise the beef

  1. Combine beef and broth in a large pot. Bring to a boil, then reduce to a simmer for 1 hour.

  2. Add leeks or onions, turnips, sugar, white pepper, and salt. Simmer for 1¼ to 1½ hours.

  3. Keep the stew simmering.

Thicken and finish

  1. In a small bowl, mix rice flour with mushroom ketchup, lemon juice, and soy sauce until smooth.

  2. Stir the mixture into the stew with grated lemon rind. Cook for 15 minutes.

  3. Add port or white wine before serving, if desired.

What each ingredient does

Beef rump
Supplies the meat that becomes tender during long, slow simmering.
Rice flour
Thickens the stew broth into a smooth, lightly body-rich sauce.
Leeks or onions
Add sweetness and savory body as they soften in the broth.
Turnips
Add mild earthy flavor and soft texture after long simmering.
Mushroom ketchup
Adds deep savory, umami flavor to the broth.
Lemon rind and juice
Add bright acidity and aroma that balance the rich meat and broth.

The step that matters

Keep the stew at a gentle simmer. A rolling boil toughens meat proteins and can break up the vegetables, while a gentle simmer slowly breaks down connective tissue so the beef becomes tender and the broth stays clear.
