Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Beef kidney
Provides the main meat, which turns tender when cooked through but firm if overcooked.
Butter
Fat that carries flavor and helps the flour brown lightly in the pan.
Flour
Coats the kidney for browning and thickens the pan liquid into a sauce.

The step that matters

Fry the slices until cooked through. Kidney becomes rubbery when overcooked and can be unpleasant when underdone, so timing the fry on both sides matters.
