Why it works: Lemon and pepper match in chemistry and in kitchens. They rank in the top 3% of all ingredient pairs, and cooks put them together in 27,047 recipes. Both carry trans-2-nonenal, which smells cardboard, fatty. The science ↓

Veal- Sydney

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the mixture

  1. Pour boiling veal stock or gravy over the bread crumbs and let them cool.

  2. Mix in the beef suet, cold roast veal, lemon rind, salt, cayenne, mace or nutmeg, and beaten eggs. Whisk the mixture well and pour it into a buttered dish.

Bake

  1. Bake in a preheated oven at 350°F (175°C) for 45 minutes to 1 hour.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Bind the mixture and set into a firm, sliceable custard-like loaf as they cook.
Bread crumbs
Absorb the hot stock and add body, keeping the loaf tender and moist.
Beef suet
Adds fat that keeps the meat moist and rich in texture.
Cold roast veal
Provides the main meat flavour and body of the loaf.

The step that matters

Let the bread crumbs cool in the stock before mixing. Hot stock soaks into the crumbs and softens them so they hydrate evenly. Adding the eggs to a very hot mixture could start cooking them unevenly, so the loaf may set in patches.

Swap the mace

How well each one fits the dish's main ingredients (bread, veal, beef, lemon, pepper, egg):

  1. Parsleyfits better
  2. Marjoramfits better
  3. Tarragonfits better
  4. Macethe original

Fit is the average pairing score against bread, veal, beef, lemon, pepper, egg. Candidates are from the same food group and used in at least 100 recipes.
