What each ingredient does

Turkey
Forms the main body of the dish, and its meat becomes tender through long gentle cooking.
Sausage meat
Adds fat and savory richness to the filling, keeping the stuffing moist as it cooks.
Bread crumbs
Soaked in milk or cream, they absorb liquid and keep the filling soft and moist.
Coarse sea salt
Draws moisture from the turkey and seasons the meat during the curing rest.
Lemon juice
Adds acidity that brightens the cold sauce and balances the richness of the meat.
Eggs (in the method)
Not listed in this record; omitted.

The step that matters

Boiling gently for 3 to 4 hours. Boiling too hard can toughen the meat and break the skin, while gentle heat cooks the stuffed bird evenly to the centre.
