Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Onions
Pounded onions thicken the sauce and fried onions add body and sweetness.
Butter
Adds fat and richness for frying the onions and stewing the base.
Mutton or other meat
Forms the main substance of the curry, becoming tender during slow simmering.
Gravy
Provides the liquid that carries the spices and keeps the meat moist.
Turmeric
Gives the curry its yellow colour and earthy flavour.

The step that matters

Stew the base without burning. Onions and spices scorch easily over direct heat, and burnt sugars and spices turn bitter. Keeping the heat gentle and the liquid present lets the onions soften and the spices bloom evenly before the meat goes in.

Swap the onion

How well each one fits the dish's main ingredients (butter, clove, garlic, turmeric, ginger, pepper, mutton):

  1. Shallotfits better
