What each ingredient does

Mushrooms
Provide the main bulk and earthy flavour, softening as they stew in butter.
Butter
Carries the flavour of the dish and browns the bread for a golden crust.
Flour
Thickens the cooking liquid into a smooth sauce and helps it cling to the mushrooms.
Gravy or beef broth
Adds savoury depth and liquid that turns the mushrooms into a sauce.
Bread
Forms a crisp base that soaks up the mushroom sauce without going soggy.

The step that matters

Stirring the flour until lightly browned. Flour must cook in the fat long enough to lose its raw taste and thicken evenly; stopping too early leaves a pasty flavour, while over-browning turns it bitter and dark.

Swap the mace

How well each one fits the dish's main ingredients (mushroom, butter, pepper, flour, beef, lemon, bread):

  1. Thymefits better
  2. Parsleyfits better
  3. Marjoramfits better
  4. Macethe original

Fit is the average pairing score against mushroom, butter, pepper, flour, beef, lemon, bread. Candidates are from the same food group and used in at least 100 recipes.
