Boiled Puddings

Ingredients

Directions

  1. Prepare a cloth by dipping it in hot water, wringing it dry, and shaking it out.

  2. Roll the pastry dough thin and press it evenly into a basin lined with the cloth.

  3. Fill the basin with the prepared apples or any other fruit.

  4. Moisten the edges of the pastry, press them together, and fold them over.

  5. Gather the ends of the cloth and tie it firmly close to the pudding.

  6. Drop the pudding into plenty of fast boiling water and boil for 1 to 2 hours, depending on size.

  7. Lift the pudding out using a strong fork twisted into the corner of the cloth.

  8. Turn the pudding gently into a serving dish and cut a small round or square from the top immediately.

  9. Serve without delay, accompanied by pounded sugar and good Lisbon sugar.

  10. Add a small slice of fresh butter and finely grated nutmeg for improvement.
