Currant Paste

Ingredients

Directions

  1. Stalk and heat the red currants as for jelly.

  2. Pour off three parts of the juice for another preserve.

  3. Press the remaining juice and pulp through a fine sieve.

  4. Boil the mixture briskly, stirring constantly, until it forms a dry paste.

  5. For each pound of the mixture, add 7 ounces of pounded sugar.

  6. Boil for an additional 25 to 30 minutes, ensuring it does not burn.
