Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Thicken the punch slightly and add richness when gently heated.
Milk
Forms the creamy body of the punch.
Sugar
Adds sweetness to balance the spirits.
Rum
Provides the main spirit flavour and aroma.
Brandy
Adds depth and warmth to the spirit blend.

The step that matters

Do not allow the milk to boil after adding the eggs. Once egg is added, high heat can scramble the proteins, leaving curds and a grainy texture. Keeping the mixture below boiling and stirring in the strained eggs quickly keeps it smooth.

Swap the orange

The recipe marks orange as optional. How well each one fits the dish's main ingredients (milk, lemon, sugar, egg, rum, brandy, clove):

  1. Vanillafits better
  2. Figfits about as well
  3. Orangethe original
  4. Applefits about as well

Fit is the average pairing score against milk, lemon, sugar, egg, rum, brandy, clove. Candidates are from the same food group and used in at least 100 recipes.
