Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Oysters
Provide the main flavour and the bulk of the filling.
Bread crumbs
Absorb moisture and give the mixture body so it holds its shape.
Beef suet
Adds fat that keeps the sausages moist and rich as they cook.
Eggs
Bind the mixture together so it holds its shape when formed and fried.

The step that matters

Refrigerate for 2-3 hours. Chilling firms the fat and lets the crumbs absorb the egg and oyster moisture, so the sausages hold their shape when formed and fried.
