What each ingredient does

Oysters
Form the main filling and provide the sausage's characteristic flavor.
Eggs
Bind the coating so the bread crumbs adhere to the oysters.
Bread crumbs
Form an outer coating that browns under the broiler.
Beef suet
Adds fat that keeps the sausage moist and rich in texture.

The step that matters

Broil the oysters gently. High heat dries out and toughens the oysters and can scorch the crumb coating before the interior is heated. Gentle heat keeps the oysters tender while the crumbs lightly brown.
