What each ingredient does

Green walnuts
Provide the main flavour base and dark colour as they steep in the vinegar.
Vinegar
Acts as the solvent and preservative, extracting flavour from the walnuts and eschalots.
Anchovies
Add savoury depth, a salty umami note that rounds out the sauce.
Garlic
Adds pungent aroma that mellows during the long steeping period.
Coarse sea salt
Draws moisture out and helps preserve the mixture during the long steep.

The step that matters

Stirring during the 10-day steep. Regular stirring keeps the solids in contact with the vinegar and distributes salt and flavour evenly, so extraction is uniform rather than uneven or stalled at the surface.

Swap the mace

How well each one fits the dish's main ingredients (walnut, garlic, vinegar, pepper, clove):

  1. Allspicefits better
  2. Tarragonfits better
