Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Mushrooms
Provide concentrated mushroom flavour and aroma once dried and powdered.
Strong veal gravy
Supplies savoury body and liquid for the sauce.
Cream
Adds fat and richness, giving the sauce a smoother texture.
Flour
Thickens the sauce by absorbing liquid as it heats.

The step that matters

Sealing the bottles promptly. Dried mushroom powder readily absorbs moisture from the air, which can cause it to clump, lose flavour and spoil. Sifting and sealing quickly limits this exposure.

Swap the mace

The recipe marks mace as optional. How well each one fits the dish's main ingredients (mushroom, veal, cream, flour):

  1. Nutmegfits better
  2. Turmericfits better
  3. Capersfits better
  4. Macethe original

Fit is the average pairing score against mushroom, veal, cream, flour. Candidates are from the same food group and used in at least 100 recipes.
