Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Bird (chicken or fowl)
Forms the main body of the dish and holds the stuffing during slow cooking.
Forcemeat
Adds a moist, rich filling that stays tender as the bird cooks.
Bacon
Adds fat and savoury flavour that melts into the filling and meat.
Chicken bones
Release gelatine into the broth, helping the gravy set to a jelly.
Veal broth
Provides the cooking liquid that gently moistens the bird and becomes the gravy.

The step that matters

Stew gently for 1 hour and 15 minutes to 1 hour and 30 minutes.. Gentle simmering keeps the meat tender and moist. A hard boil toughens muscle fibres and can break up the rolled bird.

Swap the mace

How well each one fits the dish's main ingredients (chicken, liver, carrot, veal):

  1. Celeryfits better
  2. Parsleyfits better
  3. Marjoramfits better
  4. Macethe original
