Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Meat
Forms the main body of the curry; simmering slowly turns its connective tissue tender.
Onions
Fried golden first, they add sweetness and depth to the sauce.
Curry powder
Supplies the spice flavour that defines the dish.
Flour
Mixed with the spices, it helps thicken the sauce as it stews.
Butter
Carries the frying of onions and meat, adding richness and browning.

The step that matters

Frying the onions until golden brown. Browning onions develops sweet, deep flavour through caramelisation. Pale or burnt onions make the sauce bitter or flat, so colour them evenly over moderate heat.

Swap the clove

The recipe marks clove as optional. How well each one fits the dish's main ingredients (meat, flour, onion, garlic, shallot, butter, apple):

  1. Capersfits better
  2. Thymefits better
  3. Turmericfits better
  4. Clovethe original

Fit is the average pairing score against meat, flour, onion, garlic, shallot, butter, apple. Candidates are from the same food group and used in at least 100 recipes.
