What each ingredient does

Ribband macaroni
Forms the bulk of the dish and carries the sauce on its surface.
Beef or veal stock or gravy
Provides the savoury liquid base that the sauce is built on.
Curry powder
Supplies the spiced flavour that defines the dish.
Arrowroot
Thickens the stock into a glossy sauce that clings to the pasta.
Cream or béchamel
Adds richness and a smoother, softer texture to the sauce.

The step that matters

Boiling the stock with curry powder and arrowroot. Arrowroot only thickens properly when the liquid reaches a boil and is kept there briefly, and curry powder needs heat to bloom its flavour. Boiling too little leaves a thin, raw-tasting sauce.
