A Good Mutton Pie

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the dish

  1. Preheat the oven to 350°F (175°C).

  2. Butter a pie dish.

  3. Line the dish with pastry.

Prepare the mutton

  1. Remove the fat from the mutton loin.

  2. Slice the mutton loin into equal cutlets.

  3. Season the cutlets with salt, pepper, and cayenne.

  4. Layer the cutlets in the dish.

  5. Add minced herbs and shallots if desired.

  6. Optionally add thinly rolled forcemeat between the layers.

  7. Intermingle mutton kidneys with the meat for richer gravy.

  8. Pour in a little cold water, or alternatively use gravy made from the bones.

Cover and bake

  1. Roll out the pastry cover to ½ inch thick.

  2. Seal the pie securely.

  3. Trim the edges.

  4. Make a hole in the center for steam to escape.

  5. Bake for 1.5 to 2 hours until golden brown.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Mutton loin
Forms the main meat filling, becoming tender and flavourful as it cooks slowly in the pie.
Pastry
Encloses the filling and bakes into a crisp, golden crust that holds the pie together.
Mutton kidneys
Adds richness and depth to the gravy that forms inside the pie.

The step that matters

Seal the pie securely. A tight seal keeps juices and steam inside, so the filling cooks in its own gravy rather than drying out or leaking into the oven.

Swap the shallot

The recipe marks shallot as optional. How well each one fits the dish's main ingredients (mutton, pepper):

  1. Capsicumfits better
  2. Carrotfits better
  3. Tomatofits better
  4. Shallotthe original

Fit is the average pairing score against mutton, pepper. Candidates are from the same food group and used in at least 100 recipes.
