What each ingredient does

Barberries
Provide the fruit flavour and tartness that define the jam.
Sugar
Sweetens the jam and, as it boils, thickens and helps it set.

The step that matters

Boiling the sugar syrup to the right stage. The syrup must reach a thick, heavy state before the fruit goes in. Undercooked syrup leaves the jam runny, while overcooked syrup turns it hard and sticky as the sugar concentrates.
