What each ingredient does

Mushroom buttons
Are the main ingredient that releases their flavorful liquid into the brine.
Coarse sea salt
Seasons the brine and draws moisture out of the mushrooms to preserve them.
Water
Carries the salt and spices and extracts flavor from the mushrooms.

The step that matters

Let the mushrooms cool completely before bottling. Packing mushrooms while still warm can trap steam and encourage spoilage. Full cooling before sealing with oil and corks helps keep the bottled mushrooms stable.

Swap the mace

How well each one fits the dish's main ingredients (mushroom, ginger):

  1. Turmericfits better
  2. Clovefits better
  3. Garlicfits better
