What each ingredient does

Beet-root
Forms the main body of the pickle and gives it its colour and earthy sweetness.
Vinegar
Provides the acidity that preserves the beetroot and gives the pickle its sharp flavour.

The step that matters

Let the vinegar cool completely before covering the beetroot. Pouring hot or warm vinegar over sliced beetroot can soften it and cause it to cook further, leaving a mushy texture and a weaker, less crisp pickle.

Swap the shallot

The recipe marks shallot as optional. How well each one fits the dish's main ingredients (vinegar, pepper, carrot, onion):

  1. Capsicumfits better
  2. Turnipfits better
  3. Cabbagefits better
  4. Shallotthe original

Fit is the average pairing score against vinegar, pepper, carrot, onion. Candidates are from the same food group and used in at least 100 recipes.
