Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Preheat the oven to 350°F (175°C).

  2. Grease a baking sheet with butter.

Make the dough

  1. Work the butter into the flour until crumbly.

  2. Mix in the sugar, salt, candied rind, and nutmeg.

  3. Pour in the boiling cream or milk and mix slightly.

  4. Add the egg yolks and one egg white, then mix well.

  5. Dust in the baking soda and mix until combined.

Bake

  1. Drop spoonfuls of the mixture onto the sheet.

  2. Bake until firm to the touch and golden underneath, about 15 to 25 minutes.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Flour
Provides the structure that holds the buns together as they bake.
Butter
Works into the flour to add richness and a tender, crumbly texture.
Eggs
Egg yolks and white add richness and help bind and set the buns.
Baking soda
Reacts with the other ingredients to lighten the buns as they bake.
Sugar
Adds sweetness and helps the crust brown during baking.

The step that matters

Dusting in the baking soda. Baking soda needs an acid and heat to release gas and lift the dough, so it should be evenly mixed in and the buns baked promptly; uneven mixing leaves dense or bitter spots.
