Why it works: Lemon and parsley match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 14,037 recipes. Both carry beta-phellandrene, which smells minty, terpene. The science ↓

Ingredients

Directions

  1. In a saucepan, combine the neck and feet of a cleaned fowl with ½ pint of water, lemon rind, mace, parsley, salt, and pepper.

  2. Stew until reduced to less than ¼ pint, then strain.

  3. Thicken the strained liquid and mix with more than ½ cup of cream.

  4. For the sauce, in a small saucepan, whisk together the egg yolks, lemon juice, butter, salt, nutmeg, and ⅓ cup of water.

  5. Place over low heat and stir continuously until nearly boiling.

  6. Add a pinch of cayenne if desired.

  7. Serve the sauce with the liver of the chicken, which should be boiled for 6 minutes, mashed, and strained.

Flavor stand-ins for the mace

How well each one fits the dish's main ingredients (lemon, parsley, corn, pepper, cream, egg, butter):

  1. Tarragonbetter flavor fit
  2. Nutmegbetter flavor fit
  3. Thymebetter flavor fit
  4. Macethe original

Fit is the average pairing score against lemon, parsley, corn, pepper, cream, egg, butter. Candidates are from the same food group and used in at least 100 recipes. This compares flavor only: it does not check the job the ingredient does in the dish (bulk, moisture, acidity, structure).
