What each ingredient does

Ox-tails
Collagen-rich connective tissue that breaks down during long simmering to give tender meat and body to the broth.
Carrots
Add natural sweetness and aroma to the broth as they soften during simmering.
Onion
Contributes savoury flavour and aroma to the broth as it cooks.

The step that matters

Simmer gently until the meat is tender. A rolling boil toughens meat and makes the broth cloudy, while slow simmering lets connective tissue break down into gelatin, which gives tender meat and a silky gravy. Checking occasionally helps you stop at the right point.
