Ingredients

Directions

Cook

  1. Place the head in a pot and cover with cold water.

  2. Simmer gently for 1 hour and 15 minutes to 1 hour and 45 minutes until extremely tender.

  3. Add a bone of ham or slice of hung beef for flavor, and optionally include spices and parsley.

Serve or store

  1. Remove the head and, if serving, take off the binding and serve hot with curry sauce, oyster sauce, or egg sauce and brown gravy.

  2. If saving for later use, do not pour gravy over it and leave the binding on for several hours.

  3. For added flavor, boil the gravy until well reduced and jellied when cold.

What each ingredient does

Head of meat
Provides the main body of meat and connective tissue that breaks down into a rich, tender texture.
Cold water
Forms the cooking liquid that extracts flavor and gelatin from the meat during the long simmer.
Calf's foot
Adds gelatin, which helps the broth set into a jelly when cold.

The step that matters

Simmer gently until extremely tender. Boiling vigorously toughens meat proteins and can break up the head, while a gentle simmer lets collagen slowly convert to gelatin, giving tender meat and a body-rich broth.

Swap the parsley

The recipe marks parsley as optional. How well each one fits the dish's main ingredients (meat, ham):

  1. Thymefits better
  2. Celeryfits better
  3. Clovefits about as well
  4. Parsleythe original

Fit is the average pairing score against meat, ham. Candidates are from the same food group and used in at least 100 recipes.
