Why it works: Pepper and lemon match in chemistry and in kitchens. They rank in the top 3% of all ingredient pairs, and cooks put them together in 27,047 recipes. Both carry trans-2-nonenal, which smells cardboard, fatty. The science ↓

Plain Veal Cutlets

Ingredients

Directions

Prepare the veal

  1. Trim veal cutlets into proper shape and beat them with a rolling pin until the fibers are broken.

  2. Dust the cutlets with flour to prevent gravy from escaping.

Fry and make the sauce

  1. Fry the cutlets in a pan over medium heat for 12 to 15 minutes until they are amber-brown and cooked through.

  2. Transfer the cutlets to a hot dish and pour off excess fat from the pan.

  3. Add a slice of fresh butter to the pan and melt it. Stir in 2 teaspoons of flour and cook until well-colored.

  4. Gradually add 1 cup of gravy or boiling water, then season with pepper, coarse sea salt, and lemon juice.

  5. Bring the sauce to a boil and pour it over the cutlets.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Veal cutlets
Provide the main meat, which browns in the pan and is tenderised by beating.
Flour
Dusting coats the cutlets to help hold the gravy, and thickens the sauce when cooked with butter.
Fresh butter
Melts into the pan to enrich the sauce and carry flavour.
Gravy or boiling water
Forms the liquid base of the sauce, adding moisture and savoury flavour.

The step that matters

Cooking the flour in the butter. Cooking the flour in the fat until well-coloured removes its raw taste and builds a nutty flavour. Adding liquid too quickly before it is smooth can leave lumps.
