To Roast Calf's Liver

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the liver

  1. If desired, lard the liver with bacon or wrap it in well-buttered paper.

Roast

  1. Roast the liver for 1 to 1¼ hours at 350°F (175°C), basting constantly.

  2. Remove the paper and froth the liver for 10 to 15 minutes before it is done.

Make the gravy

  1. For gravy, trim small bits of liver, flour them, and fry with sliced onion.

  2. Add 3 cups of water, a few peppercorns, and herbs to the pan, and simmer.

  3. Season with coarse sea salt and add lemon juice or pickle for flavor.

What each ingredient does

Calf's liver
Forms the main dish, and its tender, mild flesh is cooked through during roasting.
Butter
Enriches the surface and helps keep the liver moist and lightly browned while it roasts.
Bacon
Adds fat and savory flavor to the lean liver as it roasts.
Onion
Adds sweetness and savory depth to the gravy as it fries and simmers.
Lemon juice or lemon pickle
Adds acidity that brightens the rich flavor of the liver and gravy.

The step that matters

Remove the paper and froth the liver before it is done. Liver cooks quickly and turns dry and grainy if overcooked, so the final minutes need close attention while the surface is finished.

Swap the lemon

The recipe marks lemon as optional. How well each one fits the dish's main ingredients (liver, pepper, butter, onion, vinegar, thyme):

  1. Lemonthe original
  2. Limefits about as well
  3. Plumfits less well
  4. Cherryfits less well

Fit is the average pairing score against liver, pepper, butter, onion, vinegar, thyme. Candidates are from the same food group and used in at least 100 recipes.
