What each ingredient does

Mutton cutlets
Provide the meat that becomes tender and flavourful during the long gentle simmer.
Potatoes
Form the layers that soften and thicken the stew as they cook in the liquid.

The step that matters

Simmer gently for 2 hours. A gentle simmer keeps the meat tender and prevents the potatoes from breaking apart, whereas a hard boil toughens the meat and turns the stew cloudy and ragged.

Swap the onion

The recipe marks onion as optional. How well each one fits the dish's main ingredients (mutton, potato, pepper):

  1. Carrotfits better
  2. Capsicumfits better
  3. Tomatofits about as well
  4. Onionthe original

Fit is the average pairing score against mutton, potato, pepper. Candidates are from the same food group and used in at least 100 recipes.
