Partridge

Ingredients

Directions

  1. Wipe the insides of the partridge thoroughly with a clean cloth.

  2. Truss the partridge with the head turned under the wing and the legs drawn close together.

  3. Dust the partridge with flour and place it over the fire.

  4. Baste the partridge plentifully with butter while cooking.

  5. Serve with bread sauce and good brown gravy, pouring a little gravy over the partridge.

  6. For leftover cold roasted partridge, bruise and boil it down with water or unflavored broth to make gravy.

  7. Season the gravy with salt and cayenne, and add mushrooms, shallots, or herbs if desired.
