Cucumbers in Brown Gravy

Ingredients

Directions

  1. Peel and slice cucumbers, then season with white pepper or cayenne.

  2. Melt butter in a pan and lightly fry the cucumbers until golden.

  3. Remove cucumbers from the pan and drain on a sieve.

  4. Add brown gravy to the pan, enough to nearly cover the cucumbers.

  5. Stew the cucumbers gently for 25 to 30 minutes until tender.

  6. If the gravy needs thickening, remove cucumbers and keep warm.

  7. Stir in flour and butter to the gravy until thickened.

  8. Optionally, add lemon juice or chili vinegar for extra flavor.
