Why it works: Rice and carrot match in chemistry and in kitchens. They rank in the top 7% of all ingredient pairs, and cooks put them together in 2,477 recipes. Both carry trans-2-nonenal, which smells cardboard, fatty. The science ↓

Moulded Rice Casserole

Oven, in the book's wordsA quick oven

Ingredients

Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the rice

  1. Boil the rice until tender.

  2. Mash the rice against the sides of a pot with a strong wooden spoon until smooth.

  3. Allow the rice to cool.

Shape and fill

  1. Shape the cooled rice into a raised pie using your hands.

  2. If using, cut the bread to fit inside the mould, leaving a thick crust.

  3. Fill the mould with the gravy and any additional filling.

Bake and decorate

  1. Bake in a 400°F (200°C) oven until colored but not dried out.

  2. Decorate the top with a carrot cut into a point for design.

What each ingredient does

Rice
Once boiled, mashed and cooled, its starch holds the shaped pie together as a structure.
Gravy
Supplies the moisture and savory flavor of the filling, helping it stay juicy during baking.

The step that matters

Baking until colored but not dried out. Rice and bread dry out as they bake, so the surface should be checked for color and the oven time kept in view. Too long in the oven leaves the shell dry and crumbly, while too short leaves the filling undercooked.

Swap the carrot

How well each one fits the dish's main ingredients (rice, bread):

  1. Tomatofits better
  2. Asparagusfits better
  3. Cucumberfits better
  4. Carrotthe original

Fit is the average pairing score against rice, bread. Candidates are from the same food group and used in at least 100 recipes.
