Common Mutton Pie

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Preheat the oven to 350°F (175°C).

  2. Butter a pie dish and line it with half the rolled-out paste.

  3. Evenly layer the mutton in the dish.

  4. Sprinkle the mutton with salt and pepper to taste.

  5. Pour in cold water until it's within 1 inch of the rim.

  6. Roll out the remaining paste to cover the pie, about ½ inch thick.

  7. Wet the edges of the paste with cold water or egg white.

  8. Seal the edges tightly to the rim of the dish.

  9. Cut a small slit in the top to allow steam to escape.
