Poached Eggs with Gravy

Ingredients

Directions

The book gives no cooking times; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

Poach the eggs

  1. Bring a pot of water to a gentle boil.

  2. Crack each egg into a small bowl, then gently slide it into the boiling water.

  3. Poach the eggs for about 3-4 minutes until the whites are set.

  4. Remove the eggs with a slotted spoon and drain them on a paper towel.

Serve

  1. Serve the poached eggs on a plate and pour the boiling veal gravy over them.

  2. For variety, serve with a side of spinach.

What each ingredient does

Eggs
Provide the main protein, which sets into a tender, firm white around a soft yolk when poached.
Boiling veal gravy
Adds moisture and savory flavor, coating the eggs and softening the dish's richness.

The step that matters

Poaching the eggs. Eggs slide in best into water that is gently simmering rather than vigorously boiling. Rough water can break the whites apart, while cracking each egg into a small bowl first keeps the shape intact. Timing matters too, since overcooking firms the yolk.

Swap the spinach

The recipe marks spinach as optional. How well each one fits the dish's main ingredients (egg, veal):

  1. Asparagusfits better
  2. Leekfits better
  3. Chivefits about as well
  4. Spinachthe original

Fit is the average pairing score against egg, veal. Candidates are from the same food group and used in at least 100 recipes.
