What each ingredient does

Green gooseberries
Provide the fruit base, along with natural pectin and acidity that help the jam set.
Sugar
Adds sweetness, helps the jam thicken as it sets, and helps preserve it.

The step that matters

Boil the mixture quickly for 45 minutes. Sugar and fruit must reach a rolling boil and hold it long enough for the pectin to set. Constant stirring prevents scorching on the bottom of the pan, and skimming removes scum that would cloud the jam.
