What each ingredient does

Gooseberries
Provide the fruit that is cooked in syrup and then dried into a chewy, concentrated product.
Sugar
Sweetens the fruit and, as a concentrated syrup, helps preserve it during drying.

The step that matters

Simmer the gooseberries until clear and tender. Simmering in syrup softens the fruit and lets sugar penetrate, so it dries evenly without becoming hard. Stopping too early leaves the fruit firm and under-infused, while overcooking can break it apart.
