What each ingredient does

Beetroot (in the method)
Provides the main body, sweet earthy flavour and deep colour of the pickle.
Vinegar
Provides the acidity that preserves the beetroot and gives the pickle its sharp taste.
Cayenne pepper or white peppercorns
Adds gentle heat and aroma to the pickling liquid without colouring it.

The step that matters

Let the beetroot cool completely before covering it with vinegar. Pouring hot or warm vinegar over the beetroot can soften it too much and cause uneven texture, so cooling first keeps the slices firm and the pickle clear.

Swap the shallot

The recipe marks shallot as optional. How well each one fits the dish's main ingredients (vinegar, pepper, carrot, onion):

  1. Capsicumfits better
  2. Turnipfits better
  3. Cabbagefits better
  4. Shallotthe original

Fit is the average pairing score against vinegar, pepper, carrot, onion. Candidates are from the same food group and used in at least 100 recipes.
